The three coloured lines are the x,y,z axes of rotation:

ROLL is rotation of the plane like in a victory roll
= rotation through x

YAW is movement side to side, as though the plane were changing direction of travel
= rotation through y

PITCH is movement up and down - as when the nose of the plane dips or rises
= rotation through z
